2 cups strawberries
1 cup blueberries
2 cups green grapes
1/2 cup plain, fat-free Greek yogurt
1 tablespoon lemon juice
1/2 teaspoon vanilla extract
1 tablespoon honey
Feel free to switch and swap the fruit in this recipe as you see fit. Buy your loved one’s favorite fruit, or opt for what’s seasonal and on sale. Additionally, canned fruit can be substituted, but watch the sugar content. Most canned fruit is packed with syrup and this could spike your loved one’s blood sugar level.
Thoroughly wash and dry all fruit, excessive water will thin the dressing. Once dried, slice strawberries and grapes into bite-size portions. Add all fruit to a large bowl and toss gently.
In a separate bowl, mix yogurt, honey, lemon juice, and vanilla extract. Make sure the honey has been thoroughly dispersed throughout the mixture (sometimes it has trouble spreading if it’s cold). Pour the dressing over the fruit, and toss everything gently again until thoroughly mixed. Recipe as given makes 5 servings. For best results, the salad should be served immediately.
